Les Toques Blanches Philippines (LTB) celebrated
WACS International Chef's Day 2005 with much fanfare
and substance.
In the morning of 20 October, LTB members J. Gamboa
(Exec. Chef Cirkulo Restaurant), Quito Jose (Owner
Brother’s Burger), Fernando Aracama (Exec. Chef
Restaurant Uva, Embassy, and Cafeteria), and Cyrille
Soenen (Exec. Chef Crowne Plaza Hotel) judged International
Chefs Day competitions at the Center for Culinary
Arts Manila (CCA). CCA organized daylong activities
to commemorate our profession. Activities included
Platted Appetizer and Platted Dessert Competition,
speeches by the 4 chef judges on the role of chefs
as entrepreneurs, demonstration on sugar pulling and
others. LTB sponsored the event with prizes for all
winners and certificates of participation for all
contestants.
In the evening, LTB celebrated with a special
dinner at Chef Humphrey Navarro’s restaurant
P45. Dinner was attended by around 50 LTB members
and friends. The highlights of the evening included:
- Acknowledgement of Chef Ariel Manuel of Lolodad’s
Café outstanding performance at the recently
concluded MLA Black Box Competition in the Gold
Coast during the WACS Forum
- Inauguration of the Les Toques Blanches Philippines
Culinary Scholarship Program (LTBCSP). The LTBCSP
will award 10 individuals from a particular city
to a 2 week Basic Culinary Training Course at the
International School of Culinary Arts and Hotel
Management (ISCAHM) to learn Basic Cooking Techniques
and Sanitation in order that these individuals may
share their knowledge and uplift culinary standards
within their community. Beneficiary of the LTBCSP
2006 will be the instructors of Baguio City with
the assistance of the Hotel and Restaurant Association
of Baguio
- Presentation of Philippine National Culinary Team
to compete at the FHA 2006 in Singapore
