Although the Irish
weather, legendary for its unpredictability,
was predictable enough
to be stormy, cold and somewhat wet, that didn't
stop the 600 or so delegates who arrived for
the bienniel WACS World Congress from enjoying
themselves at the opening reception on Sunday
evening.
Held for the first time
in Dublin, at the Burlington Hotel, the congress
started off innocently enough. However people
in the know are aware that this is to be considered
a ground breaking affair whereby the association's
constitution and many other issues are under
scrutiny. Changes are about to take place so
that WACS will be able to grow into an even
stronger and more efficient organization.
Judging by how multicultural and
accomplished this congregation of chefs are,
it is evident that although chefs don't always
agree with one another, they certainly do show
a strength of international solidarity that
most other organizations could do well to emulate.
This congress is a fine example of how large-scale
challenges can not only be addressed maturely
but also resolved peacefully.
